Can a potato salad be dinner?
Yes, a potato salad can be dinner in my book. If the said potato salad contains ample protein, a combination of vegetables and is served warm, then it works very well actually. We enjoyed it on one of those crazy nights when some of us needed to eat it from a metal container, while others wolfed it down quickly before heading out again. There has been quite a few of those days and nights recently. Usually, we like to eat our meals together at the table, yet recently, many things are happening and we don’t always get the chance.
Recent events
January and February have quickly passed. There has been a lot of action, with things coming up that need to be immediately taken care of. Then I look at world events on YouTube (who bothers with traditional media anymore?) and I realise that I am one of the lucky ones. I aim to think of the craziness outside in a similar vein to the craziness inside. Of course, finding crumbling walls and undiscovered leaks is nowhere near as nefarious as the corrupt and compromised politicians who have been involved with the biggest cover up in history. Yet, there are some similarities. I have to hope that there is a chance for change. That just as the renovations will result in something far better, so will the world outside. Once all the crap has been exposed and disposed of.
The hope
Meanwhile, we look after ourselves, our loved ones and our communities as best we can. We eat well and carry on doing what we must do. We take action out in the world for what we know to be right. This for me, has involved joining the Green Party. I have never been particularly political, having the feeling from childhood that the world is run by corrupt, old men. I wasn’t wrong. Yet, now that I’m a mother, I have now found the motivation to try to change something out in this corrupt, old world.
Recipe for the best potato salad
Now, back to the potato salad that I have been eating for two days straight now – never underestimate food’s ability to give us strength and comfort when we need it most. It also balances soft with crunchy, sharp with creamy and is therefore incredibly satisfying and filling to eat.
The best potato salad recipe with broccoli, tuna and capers

Ingredients
200g small potatoes, halved and blanched
1 broccoli, separated into florets
200g cherry tomatoes, halved
1 tin of tuna, drained
4 tablespoons capers
2 tablespoons mayonnaise
Juice of half a lemon
Salt and white pepper
Soft or hard boiled egg, 1 per serving
Pickled onions to serve, if you wish
Directions
- Mix the mayonnaise with the lemon juice, season with salt and white pepper and whisk gently to combine.
- Combine all the other ingredients apart from the egg and pickled onions in a large bowl and pour over the mayonnaise sauce. Toss gently to combine.
- Split the potato salad between the serving plates and serve with a soft or hard boiled egg on top of each one (I like something in the middle) and some pickled onions on the side.
